Ingredients

1 slice multigrain bread
1.5 lbs ground turkey
1/4c chopped parsley
2 T whole milk
1/2 med. yellow onion, minced
pinch of salt
2 T EVOO
1 garlic clove, chopped
8 oz white button mushrooms, sliced
1/2 t dried thyme
1T all purpose flour
1.5 c chicken stock
2T light sour cream
2t dijon mustard
8oz cooked egg noodles
Directions
pulse bread in food processor to make bread crumbs. in a large bowl mix bread crumbs, turkey, parsley, milk, onion and salt. Form about 18 meatballs (approx 1.5 inches in diameter)
In a skillet, heat EVOO over medium heat. Add meatballs and cook, turning often, until browned, 5 to 7 minutes. Transfer meatballs to a plate.
Add garlic to skillet (cook for about 1 min), then add mushrooms and thyme, cook, turning often until the mushrooms are golden. Sprinkle flour over mushrooms and stir to coat. Stir in chicken broth and cook until thickened 5 to 7 minutes.
whisk in sour cream and mustard until smooth, then return the meatballs to the pan turning to coat with sauce.
spoon meatballs and sauce over egg noodles to serve.
