Introduction

Number of Servings: 4

Ingredients

    2 acorn squash
    1 lb. ground pork sausage (I use spicy)
    3 carrots, shredded
    1 C fresh spinach, chopped
    3 cloves minced garlic
    2 slices of stale whole wheat bread
    4 tbsp shredded cheddar cheese

Directions

Cut the squash in half, removing seeds. Place cut side down on a baking sheet and bake at 350 for 50 minutes.

Cook the sausage completely, add carrots, spinach, garlic and wheat bread. Cover and cook for about 10 minutes.

Stuff the sausage filling in the squash. I had to really squish it down and heap it on the top to fill it. You definitely need this much filling to go with the amount of squash. Top each squash with a tablespoon of shredded cheese.

Put in the oven for about 10 minutes, until cheese is melted nicely.
