Introduction

I developed these hearty oat cakes in the hopes of having some fast, easy to grab-and-go healthy carbs. They are not especially sweet, but with some added fruit, nuts, or a bit of honey on top, these are very palatable and healthy! I developed these hearty oat cakes in the hopes of having some fast, easy to grab-and-go healthy carbs. Ingredients

    1 cup whole wheat flour or oat flour (I used whole wheat this time because we were out of oat flour)
    1 cup rolled oats
    2 tsp baking powder
    3/4 cup water
    Optional:
    1/4 cup cranberries, raisins, nuts, or whatever else you would like to add

Directions

Mix dry ingredients in a mixing bowl. Gradually mix in water until batter is thick and pasty. Turn a dry frying pan (no oil or you'll burn them!) onto medium heat. Scoop batter into pan and spread into pancake-sized shapes. Cover pan with lid and let then cook until the bottom is brown and the top is starting to solidify. Flip over and cook for a few more minutes, making sure they are cooked through. Remove from pan and serve warm, or save them for a snack later.

Serving Size: Makes 8 4 inch cakes
