Ingredients

    1 1/2 lbs. chicken breasts, cut into 1-inch pieces
    1 T. canola oil
    1 onion, diced
    3 garlic cloves, minced
    1 T. curry powder
    1 t. ground ginger
    1 (2 lb) head cauliflower, cut into florets
    1 can coconut milk
    1/2 c. chicken broth
    1 t. salt
    black pepper to taste

Directions

Heat canola oil in a large skillet over medium-high heat. Cook chicken until browned. Transfer to a plate. Add onion and cook for a few minutes, then add garlic, curry and ginger. Cook for two minutes, and then add cauliflower, coconut milk and broth. Cover and simmer for about 10 minutes. Add chicken back to pan and cook until sauce is thickened and reduced, about 5 minutes.


Serving Size: Makes 6 1.5 cup servings
