Introduction

This soup is absolutly delish! You can add chicken or turkey, but it is honestly just fine without. If you use homemade chicken stock, like my mother does, you really won't need the meat. Also, just to clarify, the cooking and prep times are NOT exact. Everyone's stove and kitchen appliances are different, so while it takes my mom just 45 minutes, actual cooking time may vary. Ingredients

    2 cups of lentils
    1 large yellow onion
    8 cups of chicken broth or stock(if you are a vegan, you can substatute vegtable broth.)
    4 stalks of raw celery
    6 large carrots(I know it says otherwise above; I'm still figuring this site out.)
    6 Large idaho potatoes

Directions

Take out a large soup pot and set it on your stove. Put your lentils in and pour your chicken stock over it. Prepare vegetables by peeling and chopping as desired, and put in the other ingrediants as well. Of course, if you are going to put any meat in it, you'll cook it in another pan! Turn your stove on high and bring to a boil. After it comes to a boil, turn the heat to low and let simmer until vegetables are fork-tender, and there you are! A delicous 1 pot meal! Enjoy!
