Introduction

I loved making this - it was quick and tasty. Pair with a little bit of brown rice, and/or side salad. Top with favorite cheese or cheese substitute. Stores well - take extras and take to work for lunch! I loved making this - it was quick and tasty. Pair with a little bit of brown rice, and/or side salad. Ingredients

    1 can red kidney beans
    1 can of lentils
2/3 can of low-sodium tomato sauce
1 green chili pepper (fresh or canned)
    2 tsp cumin
    2 tsp chili powder
1 tsp cayenne (very hot, so use to taste)

Directions

Note: I think if you rinse all of the ingredients to get rid of excess salt, and use low-sodium version of tomato sauce, the sodium content listed in the nutrition info should be a lot less.

Rinse the beans (if canned). Chop the green chili up into small pieces. Combine all ingredients in saucepan. Heat and serve!
