Introduction

Stir-fried udon noodles with vegetables. Stir-fried udon noodles with vegetables.
Number of Servings: 1

Ingredients

    Chikara (or similar brand) Udon Noodles package
    2T Dried shrimp
    1 cup napa cabbage, sliced
    1/2 cup snap peas
    1/2 cup carrots, diced or pre-purchased matchstick
    1t olive oil
    1T cilantro
    juice of half a lemon
    garlic powder
    salt & pepper

Directions

Add olive oil to pre-heated skillet.
Saute all vegetables, except cilantro, until soft. About 5-6 minutes.
Remove vegetables and set aside.
Follow instructions on noodle package to stir fry. (The instructions call for oil but I just use a non-stick skillet and the residual oil from the vegetables.)
Noodle package includes a soup base. Make this sauce while noodles fry.
Once noodles are fried, 2-3 minutes, add sauce and vegetables back into the skillet.
Heat through and finish with lemon juice, salt and pepper.
Garnish with cilantro.
