Introduction

Ingredients

    BASE
    1 1/4 cups chocolate crumbs
    2 Tbsp granulated sugar
    1/4 cup butter, melted

    FILLING
    2 (250g) (8 oz) packages of cream cheese
    1/2 cup granulated sugar
    2 large eggs
    1 cup dark mini-chocolate chips

    TOPPING
    1/2 cup dark chocolate chips
    2 Tbsp whipping cream


Directions

Mix Base ingredients together and press into 9" springform pan.

For the filling, beat cream cheese, sugar and vanilla until smooth. Add eggs 1 at a time and beat after each until smooth. Stir mini-chocolate chips into batter. Pour into crust

Bake in 300F oven for 50-60 minutes - turn oven off and leave door ajar and leave to cool in the oven for 30 more minutes. Remove from oven and place on cooling rack. Run spatula around sides to loosen (do not remove side of pan) and cool for another 30 min. Then refrigerate, uncovered, until thoroughly chilled. Once chilled, you can remove the side of the pan.

For the Topping, place 1/2 cup of chocolate chips with 2 Tbsp of whipping cream in the microwave and use High for 20 - 30 seconds. Remove and stir until the cream and chips have melted together and you have a rich chocolately coating. Let cool for 5 minutes then spreak over cheesecake. Sprinkle with more mini-chocolate chips if you wish. Optional.
