    Boil 2 chicken breasts with onion, carrot, and celery for about 1 1/2 hours. This will give you the meat and broth for the pie.
    Saute the onion, celery, carrots, and potatoes for about 10 min in the coconut (or canola) oil. Add the salt and pepper, stirring often. Stir in the flour and let it disolve into the vegetables. Slowly add in the broth and milk stirring constantly until thickened. Add the frozen vegetables (optional) and the chicken. Pour into a large baking dish. Cover with a pie crust.
    Make slits to let out the steam and bake.


Preheat oven to 400. Bake 50-60 minutes until bubbly and crust is light brown
