Ingredients

2 lg sweet potatoes, chopped
1 lg bunch kale, stemed and chopped
1 c split peas
1 sm onion, diced
1 clove garlic, minced
4 c veggie broth
2-4 c water
salt & pepper
Directions
Pre-cook split-peas if you like them well done/mushy. Otherwise, add to the soup for an al-dente bite.
Saute onions and garlic in a little bit of veggie broth until translucent - about 5 minutes. Add remaining broth and water, sweet potatoe, kale, and split peas (if not using pre-cooked). Season. Bring soup to a boil. Reduce to a simmer. Cover. Cook until potatoes are tender, kale is wilted, and split-peas are al dente (or add pre-cooked split-peas after other veggies tender).
