Ingredients

2 egg yolks
3 ½ tbsp sugar
1 whole egg
1 cup cake flour
2 ½ tbsp potato starch
2 egg whites
3 tbsp sugar
Directions
Preheat oven to 350F. Grease and flour a loaf pan.
Whisk together the egg yolks and sugar until light; mix in the whole egg and then add the flour and potato starch, beating smooth.
Beat the 2 egg whites with remaining sugar until stiff peaks form; gently fold the beaten whites into the egg yolk mixture, lifting to incorporate air.
Pour the mixture into the prepared pan and bake 45 minutes or until tests done.
