Introduction

Totally not the same as ceviche, but inspired by it, and totally delicious! Totally not the same as ceviche, but inspired by it, and totally delicious!

Ingredients

    3.5 oz small cooked, peeled, and detailed/deveined shrimp
    1 medium tomato
    juice of 1 lemon
    cilantro to taste
    chopped fresh garlic to taste
    handful of chopped raw white onions

Directions

In a small saucepan, begin heating the shrimp and most of the garlic and onions (set a bit of each aside) on medium low heat. While that is cooking, take your tomato and make a round cut near the top so you can scoop out and save the insides. It should look like a little cup. Add the insides of the tomato, the garlic, the onions, most of the cilantro, and the lemon juice to a small blender (like a Magic Bullet) and blend. Add the mixture to the sauce pan for just a moment and mix well. Pour everything into the tomato and garnish with cilantro. Serve warm.
