Ingredients

    Eggs, 7 large
    Cheese - Smoked Gruyere, 4 oz - chopped or shredded
    Mushrooms, fresh, 2 cup, pieces or slices (10 oz package)
    Zucchini, about 1 cup, sliced -- 1 small/ medium
    Yellow Squash, about 1 cup -- 1 small/ medium
    Purple onion, medium - chopped
    Milk, 2%, 1 cup (remove)
    Herbs de Provence 1/2 tsp or to taste
    Salt & pepper to taste

Directions

Saute chopped veggies in oven-safe 10" skillet (spray with vegetable oil spray) until moisture rendered, and vegetables are tender.
Layer chopped cheese over vegetable layer.
Mix eggs and milk and spices; pour over vegetables and cheese.
Bake at 375 until set and golden brown

Serving Size: Makes 4 brunch size servings
