Ingredients

1 medium onion
2 Tbls olive oil
1 1/2 lbs shrimp, peeled and deveined
1 10 oz can Rotel tomatoes, drained with liquid reserved
8 oz low fat cream cheese, room temp
Grits, prepared 6 servings
Directions
Saute onions until translucent. Add rotel tomatoes,1/2 of the reserved liquid and shrimp. Cook approx 3-4 minutes until shrimp is done. Add cream cheese, stir thoroughly to melt cream cheese. Remove from heat.. Serve over grits.
