Ingredients

    16 cups of water
    3/4 cup of washed mung beans
    1 1/2 cups of Basmati rice
    Veggies of your choice
    2 tablespoons oil
    1 (or more) chopped onion
    6 - 9 cloves of garlic
    1 chili pepper
    1 teaspoon peeled and chopped ginger room
    1/2 teaspoon turmeric
    1/2 teaspoon garam masala
    1/4 teaspoon ground black pepper
    1/4 teaspoon red chili flakes
    Whole bunch of cilantro
    Non-fat yogurt

Directions

Boil the water. Add mung beans and ten minutes later, lower the heat to a simmer and add rice. Throw in any vegetables you have available, especially green vegetables. Kale or collard greens work well with carrots and celery. Cook beans, rice and veggies for 30 - 40 minutes. Heat oil in a pan and fry onion, then chili pepper, then garlic. Finally when those are almost done, add the spices and fry for one minute. Add spices to kitchari. Add chopped raw cilantro. Salt to taste. Spoon yogurt on top.

Serving Size: Makes a huge pot, good for a crowd, or for the week
