We are learning about Ancient Persia, and supposedly, this was Alexander the Great's favorite food. The Persians pronounced Alexander "Iksender". Chicken in a tomato sauce, served over pitas. Mmm. Ingredients

1 TBS Olive Oil
24 ounces of Chicken breast, diced
1 lg onion, chopped
clove garlic
15 oz can of tomato sauce
ground cumin and pepper, to taste
1/2 c smart balance, melted
1/2 c Trader Joe's Coconut Milk drink
Parsley for garnish, if desired
Directions
In a pan, heat the oil, onions, garlic and chicken until juices run clear. Add tomato puree and spices. Simmer on the stovetop for 10 minutes.
Melt Smart Balance; set aside.
While the "sauce" is simmering, heat up pitas/flat bread in the oven. When they are warm and toasted, chop in bits, add to your plate and drizzle with TBS of melted smart balance. Immediately add the tomato sauce.
Add coconut mmilk. Add parlsey. Enjoy!
