We are learning about Ancient Persia, and supposedly, this was Alexander the Great's favorite food. The Persians pronounced Alexander "Iksender". Chicken in a tomato sauce, served over pitas or rice. Ingredients

    1 TBS Olive Oil
    24 ounces of Chicken breast, diced
    1 lg onion, chopped
    clove garlic
    8 oz tomato puree
    ground cumin and pepper, to taste
    1/2 c skim milk yogurt
    Parsley for garnish, if desired

Directions

In a pan, heat the oil, onions, garlic and chicken until juices run clear. Add tomato puree and spices. Simmer on the stovetop for 10 minutes.
While the "sauce" is simmering, heat up pitas/flat bread in the oven. When they are warm and toasted, chop in bits, add to your plate and drizzle with TBS of melted smart balance. Immediately add the tomato sauce.
Top with a TBS of plain yogurt. Add parlsey. Enjoy!
