Introduction

This dish is best made in a microwave safe ceramic dish with a lid.

To lower calories you could use only diced pepperoni or ground beef instead of both. You could also use turkey pepperoni instead of traditional.

Ingredients

    1 pound ground beef
    1 bag of Ronzoni Whole Wheat Wide Noodles
    2 jars Ragu Pizza Quick Sauce
    1 jar of water (use Ragu Pizza Quick Sauce jars)
    1 package (6 ounces) Hormel Diced pepperoni
    2 cups 2% Milk Shredded Cheddar Cheese
    1 packet (25 or so) Hormel Pepperoni (regular size)


Directions

Place one pound of ground beef in microwave-safe dish and cook for 5-7 minutes until brown, stopping occasionally to chop it up and stir. When fully cooked, pour into a colander and rinse. Then return ground beef to dish.

Add noodles, pizza sauce and water to the ground beef and mix as best you can. (I usually fill each sauce jar half way with water and shake it up to get all the pizza sauce from the jars). Cover the mixture with the lid and microwave for 5 minutes.

Stir the ingredients after 5 minutes, then replace lid and continue microwaving for 10-15 more minutes, stopping it every 5 or so minutes to stir.

Once the mixture has cooked down a bit, mix in the pepperoni and continue to cook until the noodles are done (about 25 minutes of total cook time).

Sprinkle cheese on top of casserole and arrange a layer of pepperoni on top in circles or rows. Microwave for a final minute or two until cheese is melted. Serve warm.
