2 C Fiber Now Honey Clusters Cereal
3/4 C Brown Sugar
1 C Walnuts, Chopped
1/4 C Applesauce
1 C Plain low fat yogurt
2 t Vanilla extract
1 Egg (large)
1 C Very Ripe Mashed Bananas (2 Med)
1 C All Purpose Flour
1 C Whole Wheat Flour
1 t Baking soda
1/4 t Salt
Directions
Heat oven to 350 F. Line muffin tin with paper liners. Crush cereal by placing in a resealable plastic bag and crushing with a rolling pin.
In a large bowl, beat sugar and applesauce on medium speed until blended. On low speed, beat in vanilla, egg and yogurt until smooth. Beat in banana, flours, baking soda and salt. Stir in cereal and walnuts until well mixed.
Fill each cupcake liner 2/3 full with batter. Bake approximately 1 hour or until toothpick inserted into center comes out clean.
