Ingredients

    1 tbsp olive oil
    12 oz turkey polish sausage
    3/4 cup chopped onion
    1/2 cup chopped green bell pepper
    1 glove garlic chopped or minced
    1 zucchini peeled and cubed
    1 yellow summer squash peeled and cubed
    1 tsp chili powder (use Tony Chachere's!! - add more if desired)
    2 cubes of bullion
    3 cups water
    1 14.5oz can of petite diced tomatoes
    1 1/2 rice cooker cups of rice (will produce 3 cooked cups of rice - equals 1 1/8 tradition cups of dry rice)

Directions

Preheat rice cooker for about 10 minutes. Saute first 7 ingredients (oil through squash) until tender. Add the rest of the ingredients and cook on white rice button.
