Introduction

My variation on John Grisanti's Linguine with Clam Sauce. He had a fabulous Italian retaurant in Memphis TN, until his death. This may be higher in carbs, but it is a one dish dinner that Patrick absolutely loves. My variation on John Grisanti's Linguine with Clam Sauce. Ingredients

    2 tbsp. unsalted butter
    2 tbsp. extra virgin olive oil
    1 tbsp. chopped garlic
    1 tbsp fresh oregano (1 tsp. dried)
    1 bunch broccoli, steamed
    2 cans chopped clams
    1 c (approximately) dry white wine
    16 oz. linquine

Directions

1. Cook linguine according to package directions.

2. Drain clams, saving juice.

3. Melt butter with olive oil in large sized pan over medium heat. Slowly saute garlic . Do not let it brown.

4. Combine clam juice and white wine to make 2 cups (if you don't want to use wine, buy a bottle of clam juice to replace the wine). Add liquid and oregano. Raise heat slightly to bring to a boil. Let boil while linguine finishes cooking.

5. Add clams and steamed broccoli to heat them. Drain pasta well and place on a platter or in a large pasta bowl. Pour sauce over pasta.

Serving Size: serves 6 hungry or 8 smaller servings
