Introduction

This is a traditional broccoli salad, but with a bit of a twist - less sugar and with balsamic vinegar instead of regular vinegar to sweeten things up a bit. This would be good for a potluck or cookout or just make ahead of time and have as a side dish for lunch or dinner throughout the week. Ingredients

    2 crowns of broccoli cut up into bite size pieces
    2 large carrots
    1 bunch of scallions
    1/2 c. bacon bits
    1/2 c. roasted sunflower seeds (optional - to cut back fat and total calories you can leave this out)
    1/2 c. raisins (optional)

    Dressing:
    1 c. fat free miracle whip
    2 Tablespoons balsamic vinegar
    1/3 c. sugar (recipe calls for 1/2 c. but with the vinegar I use, I don't need that much)

Directions

start with dressing and make an hour or 2 ahead of time. whisk together all ingredients for the dressing thoroughly (because of the balsamic vinegar, it should be a light brown color, no more white from the miracle whip).

For the salad: chop broccoli, carrots, scallions into bite size pieces and mix well with other ingredients. Stir in dressing and mix well.

Keep stored in refrigerator. If you opt to use regular vinegar, you may need to add more sugar. You can also add other vegetables for nutritional benefit such as red pepper, celery, cauliflower.

Serving Size: makes about 6 cups (nutritional info for 1 cup serving)
