Introduction

Very delicious cupcakes made without oil or milk! Very delicious cupcakes made without oil or milk!
Number of Servings: 48

Ingredients

    1.5 cups unsweetened cocoa powder
    3 cups flour
    3 cups sugar
    3 tsp baking soda
    1.5 tsp baking soda
    4 large eggs
    1.5 cups warm water
    1.5 cups soy milk (I used So Good Fat Free)
    3 tbsp unsweetened applesauce
    2 tsp vanilla extract

Directions

preheat over to 350 degrees. Line muffin tin with paper liners, set aside. Sift together cocoa powder, four, sugar, baking soda, baking powder into a large bowl. Add eggs, warm water, soy milk, applesauce, and vanilla, and mix until smooth (about 3 minutes). Scrape down the sides and bottom of bowl to ensure batter is well mixed. Fill each muffin liner with 2/3 batter. Bake for approximately 22 minutes. Transfer to a wire rack; let cool completely.
