Ingredients

    1 tbsp Olive Oil
    3 oz Green, Yellow and/or Red Bell Peppers Chopped
    1 oz Onion chopped
    1 Mushroom chopped
    1 Large Egg
    1 oz. pepper jack cheese

Directions

Fry Onion, Mushroom and Pepper in Oil. Add egg and Scramble. Remove from Pan and Shred pepper Jack Cheese over scramble

Serving Size: Makes 1 serving
