Ingredients

    2 lb ground beef
    2 10 oz packages of frozen spinach (thaw and strain)
    4 eggs
    1 cup oats
    1 medium sized onion, chopped (roughly 1 cup)
    1 green pepper, chopped (roughly 1/2 cup)
    seasoning to taste - salt, pepper, garlic powder, etc.

    1 cup corn flake crumbs

Directions

Mix together the ground beef, spinach, eggs, oats, onions, green pepper, and seasoning. Form into tablespoon size balls. In another dish, put the corn flake crumbs. Take the meatballs and roll in the corn flake crumbs. Put onto a cookie sheet and freeze until needed. Makes roughly 63-65 meatballs.

Bake at 325 degrees for 30 minutes or fully cooked through. Serve with marinara, BBQ, sweet n sour for an appetizer.
