A very simple black bean & mushroom soup A very simple black bean & mushroom soup
Number of Servings: 6

Ingredients

    Canned Black Beans, 1 cup
    Red Onion, 1/2 diced
    Canola Oil, 3 tbsp
    White Mushrooms, fresh, 2 cups sliced
    Vegetable bouillon ,1 cube
    Cumin seed, 1 tbsp
    Water, about 4 cups
    Kosher Salt, to taste
    Pepper, black, to taste

Directions

Dice and saute the onion in the canola oil. Add the mushrooms and cook for a couple minutes. Add the beans (undrained) and water to the desired soup consistency. Add the cumin, bouillon cube, salt and pepper. Bring to a boil. Cover and let simmer 15 minutes.

Serving Size: Makes 6 servings
