Introduction

I won't take credit. I got this one from allrecipies.com. It's "thai" ish. My kids and hubby love it and it makes a great easy meal. serve this over rice or noodles and your good. Number of Servings: 8

Ingredients

    1 whole cut up chicken
    1 cup of peanut butter
    1 can of lite coconut millk
    2 cups of salsa

Directions

Put chicken in slow cooker. In seperat bowl mix all the other ingredients. Pour over the chicken and let it cook for 8 hours on low. Once chicken is cooked remove bones and shredd (I do this right in the pot with two forks). Nutritional info is for this part only. But I eat it over rice or noodles just be sure to add the calories.
