Introduction
I love cooking all the ingredients for a omelette and adding the scrambled eggs to the pan, making what I call a scramble. The best part about these is that they are so versatile - you can put anything you want and as much as you want! Also, I use a lot of the Al Fresco Apple Maple Chicken Sausage because I love it, less can be used. If made as breakfast, this serves 4, if served with other items (waffles, biscuits, fruit salad, etc.) it will serve more. Also, I do not pay attention to how long it takes me to cook, so the cooking time may be a little off. Ingredients

1 Tbsp POlive Oil
About 1/2 cup broccoli florets (I used Eat Smart bagged kind)
About 1/2 small sweet onion, sliced or diced
1 12 oz package Al Fresco Apple Maple Chicken Sausage
8 eggs
Pinch of Sea Salt
Pinch of Black Pepper
About 1 Cup shredded Cheddar Cheese
2 Tbsp Water
Directions
In a non-stick skillet, (or whatever you have) heat olive oil over medium heat. Add onions and stir, cook 2 minutes. Add the broccoli florets, stir. Cook about 5 minutes, until beginning to soften and brown on the edges. Add the Chicken Sausage Links, and stir every couple minutes until the sausages start to get color. When they do, remove the pan from the heat, and remove the sausages and cut into bite-sized pieces. Add the sausage back to the pan, stir, and put back on medium heat. Crack eggs into a bowl, add 2 Tbsp water, a little sea salt, black pepper, and beat. Pour the beaten eggs into the pan, and using a plastic spatula, gently scrape the bottom of the pan, scrambling the eggs. When the eggs are done, sprinkle the cheddar cheese over the eggs, turn off the burner, and cover. Let sit two minutes, uncover, and enjoy!
