Ingredients

    1/2 med sized tomato
    1/2 med sized red pepper
    4 T chopped scallions
    5 oz smithfield smoked ham diced
    2 whole large eggs
    7 large eggwhiles

Directions

Heat oil, saute' scallions, tomatoes, red peppers, until tender. Add ham and heat; add egg mixture and cook to desired readiness.

Serving Size: makes 4 one and a half cup servings
