Introduction
Delicous on a cool autumn evening. This freezes well and is easily packed for a quick lunch at work. Feel free to add whatever veggies you have on hand, or for some protein add some lean diced ham, cooked ground turkey or turkey sausage. Lot's of possibilities! Delicous on a cool autumn evening. Ingredients

2 Cups of carrots
1 Cup of cabbage chopped
1 Cup of cauliflower
1 Medium sweet potato
1 Medium white potato
1/2 Cup onion chopped
1 Cup of water
1 Cup of beef broth
2 Cups of chicken broth
Directions
Saute the 1/2 cup of chopped onion and add with all other ingredients in a 3 quart pot. Simmer for 25 - 30 minutes until all veggies are soft. Let it cool for 10 minutes and then add to blender 2 cups at a time until all is pureed. Pour back into pot and reheat. At this time you can add the cooked meat if you wish. Serve with a sprig of parsley for decoration or portion and freeze for quick lunches on the go.
