Ingredients

2 eggs
1 cup unsweetened almond milk
1 cup flour
2 scoops protein powder
3 tsp. baking powder
1/4 tsp salt
2 Tbsp olive oil
1 cup chopped strawberries
1 banana cut into bite size pieces
Directions
Step 1 - Whisk 2 eggs in a large mixing bowl.
Step 2 - Pour in unsweetened almond milk. Mix well.
Step 3 - Add in 1 cup flour.
Step 4 - Mix in 2 scoops protein powder. Mix well.
Step 5 - Add in 3 tsp baking powder and 1/4 tsp salt.
Step 6 - Add in 2 Tbsp olive oil.
Step 7 - Mix in fresh or (thawed) frozen strawberries and bananas. Mix well.
Step 8 - Preheat & Spray pan or griddle with non-stick cooking spray. Pour 1/4 to 1/2 cup pancake batter into a preheated pan or griddle.Step 9 - Cook on low until batter starts to bubble on top. Flip and repeat!
