Number of Servings: 3

Ingredients

    1.25 Cups egg beaters or other liquid egg
    2/3 cup veggie sausage crumbles, or use patties broken up
    1/2 of a large sweet red, yellow or green pepper, chopped
    1 cup fresh baby spinach
    2 oz. fat free feta cheese or blue cheese, with or without herbs added, crumbled
    1 Tbs. olive oil, plain or flavored

Directions

Heat olive oil in large fry pan
add chopped peppers and cook until tender crisp
add sausage crumbles and cook until hot
add spinach and stir/cook until wilted slightly
spread mixture evenly across pan
pour liquid eggs over mixture
sprinkle feta cheese over eggs
cover and cook on medium about 10 minutes, but watch carefully.
Do not stir like scrambled eggs, but lift edges occasionally and tilt pan to distribute liqued eggs to edges to cook faster.
Serves 2-3. I figured this recipe to serve three.
