Ingredients

    Water, tap, 8 cups
    Turkey breast meat, 12 ounces plus bones of carcass
    Onions, raw, 1 cup, sliced
    Celery, raw, 1 cup, diced
    Brown Rice, 1 cup of quick cook variety
    Mushrooms, fresh, 1 cup, pieces or slices
    Yellow Sweet Corn, Frozen, 1 cup kernels

Directions

Put turkey and bones into water. Add onion and celery. Bring to a boil, turn down and simmer for an hour. Strain soup and remove bones. Return soup to pan. If there is a lot of fat on top, skim off. Return to a boil and add rice, boil 5 minutes, add mushrooms and corn and bring to a boil again. Turn off stove and let sit about 20 minutes.
