Ingredients

    2 c. canned crushed tomato
    4 serving whole wheat rotini (224 grams dry)
    1/2 c. ricotta cheese, part skim
    1.5 c. low fat cottage cheese
    2 c. chopped colored peppers (red, green, orange, yellow)
    1/2 yellow onion
    4 tbsp. minced garlic
    1.5 tbsp. Italian seasoning
    .5 tsp. crushed red pepper
    8 oz. smoked turkey sausage
    1 c. shredded mozzarella cheese, part skim

Directions

Prepare pasta according to package. Drain and set aside.
Saute peppers and onions on stove. Set aside.

Mix crushed tomato with Italian seasoning and crushed red pepper. Use a small amount to cover bottom of 9x13 baking pan.

Mix pasta, ricotta cheese, peppers, onions, and cottage cheese. Spread mixture evenly in pan.

Slice turkey sausage and cover pasta in pan. Cover with remaining crushed tomato sauce. Cover with mozzarella cheese.

Bake at 350 for 20-25 minutes.
