Ingredients

    2 tsp olive oil
    1 large sweet potato, peeled and cubed
    1 29oz can of black beans, rinsed and drained
    1 29oz can of red kidney beans, rinsed and drained
    3 garlic cloves
    1 Tbl Curry powder
    6 cups vegetable broth
    1/4 cup plain, fat free, Greek yogurt
    2 Tbl cilantro
    Zest of half a lime

Directions

Stir all ingredients except for cilantro, yogurt and lime zest into crock pot. Cook on high for 4-5 hours or low for 8-10 hours.

Meanwhile mix yogurt, lime zest and cilantro together.

When finished purée in batches. Serve with a tablespoon of the yogurt mix on top of each bowl.
