Ingredients

    6 potatoes -- sliced
    1 large onion -- sliced
    2 carrots -- sliced
    1 green pepper -- sliced
    1 zucchini -- sliced
    1 cup corn -- frozen or fresh
    1 cup peas -- frozen or fresh
    Any other favorite veggies

    Sauce

    2 1/2 cups tomato sauce
    1/4 cup Tamari soy sauce -- low-sodium
    1 tsp thyme -- ground
    1 tsp dry mustard
    1 tsp basil
    2 tsp chili powder
    1/2 tsp cinnamon
    1/8 tsp sage
    2 Tbs parsley

Directions

Layer vegetables in crock pot in order given. Mix together ingredients for sauce and pour over vegetables. Cook six hours on high or 12 hours on low.

    Very Good
    I made this the other night and really liked it! Instead of tomato sauce, I used a couple of cans of diced tomatoes in their juice. Next time I'll add water or stock, as we like it a bit more like a stew. I used sweet potatoes, onions, baby carrots, green pepper,yellowpepper, zukes, corn, peas. - 11/28/11

    Incredible!
    Very unique and flavorful taste. Tried to follow recipe, but wouldn't all fit in 5 1/2 qt. pot. Next time I will reduce # of potatoes, replace carrots, corn, & peas with 16oz. frozen mixed veggies. Nice lg sevings! - 1/28/09

    wonderful, very hearty! i would make this again and substitute more root veggies for the zucchini and peppers, which got a bit mushy. great winter dish! - 1/10/08
