Introduction

Sweet, tart, & chewy all combined in one! A different spin on the classic carrot raisin salad.

*To lower fat/cal content, use reduced fat mayo, or vegenaise. I only had regular mayo on hand at the time.

Ingredients

    5 medium carrots, shredded
    2 green apples, chopped
    1/4 cup mayonnaise or vegenaise
    1 tbsp lemon juice
    1/2 cup chopped walnuts
    1/2 cup craisins
    2 tsp sugar

Directions

Whisk together mayonnaise, lemon juice, and sugar in bowl. In seperate bowl add shredded carrots, apples, walnuts, & craisins. Toss with dressing mixture. Refrigerate immediately.

Serving Size: Makes 8 one-half cup servings
