I want to make this for Thanksgiving. Make a day ahead to refrigerate overnight. This is from a diabetic website. I changed one ingredient to match what I have, and guessed about how many graham crackers. I worked with calculators to get the measurements & calories as close as possible.

Ingredients

    Graham Crackers, plain, honey, or cinnamon, 8 large rectangular piece or 2 square (remove)
    Becel light margerine, 12 tsp (remove)
    Low fat cream cheese, 226.8 grams (remove)
    Pumpkin, canned, without salt, 2.5 cup (remove)
    Cinnamon, ground, 1 tsp (remove)
    Cloves, ground, 1 tsp (remove)
    *Ground Nutmeg, 0.13 serving (remove)
    *Brown Sugar Blend - Splenda brand (2 tsps), 12 serving (remove)
    Milk, nonfat, 0.5 cup (remove)
    *Albertson's Pudding Instant SF FF Vanilla (1/4 pkg), 80 gram(s) (remove)
    *Cool Whip Lite (8oz/entire tub=25 servings), 339 gram(s) (remove)

Directions

Recipe Instructions:
Place whole graham crackers in a 13 X 9-inch pan. Melt margarine, and brush over crackers.

Put cream cheese in bowl and beat with electric mixer. Mix spices in pumpkin, and add to cream cheese. Beat together.

Add sugar twin, milk and sprinkle in dry pudding mix. Mix in the pumpkin and cream cheese mixture. Beat until well blended. Fold in Cool Whip. Pour in pan, and spread over crackers. Cover with plastic wrap, and refrigerate overnight

Graham crackers
1/4 cup Diet margarine, melted.
8 oz Lite cream cheese (soft)
1 large Can 100% pumpkin
1 tsp Cinnamon
1/4 tsp Cloves
1/4 tsp Allspice
1/2 tsp Nutmeg
1/2 cup Brown Sugar TWIN
1/2 cup Skim milk
2 package Sugarfree Instant Pudding
-(Vanilla flavor)
12 oz Lite Cool Whip

Serving Size: 2.5" square servings. Cut length of pan in 1/3. Width in 1/4.
