Introduction

Found this recipe in the bulk foods dept of my local grocery and thought to give it a try. Delicious as is, while lending itself to infinite variations based on preferences and availability of ingredients. This recipe can also be made in a slow cooker. Ingredients

    1 cup dried mung beans
    2 med. carrots cut into 1/4 inch pieces
    2 med. stalks celery cut into 1/4 inch pieces
    1 med. onion, chopped
    1 clove garlic, minced
    2 cans diced tomatoes
    4 slices bacon, chopped
    3 Tbsp lite soy sauce
    1 tsp black pepper
    1 3/4 cups water

Directions

Cook bacon on high heat for 1 minute. Add onion and garlic, cooking until starting to color. Add beans, tomatoes, soy sauce and pepper and water. Reduce to simmer and cook for 25 minutes. Add carrots and celery and continue cooking for 35 minutes or until vegetables are tender and beans are soft.

Serving Size: serves 6-8
