    3 1/2 c. dried blackeye peas
    12 c. water
    1/2 c. dried minced onion
    6 Tbsp. chicken bouillon Instant granules
    2 Tbsp. dried parsley flakes
    1 Tbsp. granulated sugar
    2 tsp. dried minced garlic
    1 tsp. chili powder
    1 tsp. onion powder
    1/2 tsp. black pepper
    1/2 tsp. garlic powder
    14.5 oz. can Del Monte Diced Tomatoes, no salt added


Rinse peas and place in a microwave safe dish. Cover with water, 1 to 2 inches over top of peas. Cover dish loosely with plastic wrap and microwave on high for 15 minutes, rotating after 7 minutes. Drain and rinse peas very well. Place peas in a large soup pot. Add water, seasonings and tomatoes. Cover, bring to a boil. Lower heat, cover and simmer for about 90 minutes or until peas are tender. Stir occasionally while the soup simmers.

Serving Size: 16 - 1 1/4 cup servings
