Introduction
Savory quinoa with sauteed onions and celery, seasoned with rosemary, parsley, and sage and given a light sweetness from craisins. Portions easily increased and can be made vegetarian. Ingredients

1 cup turkey stock
1/2 cup quinoa
100 calorie pack craisins
1/2 TBS fresh parsley, diced
1 tsp dried rosemary
3/4 tsp dried sage
1 TBS olive oil
1/4 cup yellow onion, chopped
1/4 cup celery, chopped
1/4 tsp crushed garlic
1/8 tsp onion salt
pinch of garlic salt
Optional add in: mushrooms
Tips
Chicken or vegetable stock can be used instead- I did half turkey stock half water because I was almost out and it was still wonderful
Directions
In a small sauce pot, heat olive oil and add onions. Cook until almost translucent and add the garlic and celery (and mushrooms here if desired). Cook for another min. Remove from heat.
Add parsley, rosemary, sage, and craisins. Mix together. Add quinoa and stock, mix, and bring to a boil. Once boiling, reduce to a simmer and cover for 10-15 min (until water has evaporated).
Uncover, fluff with fork, season with salt and mix. Serve.
Serving Size: Makes 3 Servings
