Introduction

Very light version of a decadent dessert. Very light version of a decadent dessert.
Number of Servings: 6

Ingredients

    1 cup evaporated skim milk
    1 cup canned pumpkin puree
    1/2 cup 2% milk
    3 tablespoons Splenda blend (can use sugar or equivalent in artificial sweetener of choice)
    2 teaspoons vanilla extract
    1 teaspoon ground cinnamon
    ˝ teaspoon nutmeg
    1/4 teaspoon salt
    2 large eggs
    2 large egg whites
    Cooking spray,
    “butter” spray- optional
    2 tablespoons sugar

Directions

Preheat oven to 300 . Combine milks, pumpkin, spices, vanilla and salt- beat until smooth (about 2 minutes).Beat the eggs and splenda mixture together until light and golden. Combine eggs and pumpkin mixture, beat until well combined and smooth. Divide the mixture evenly among 6 (6-ounce) ramekins or custard cups which has been sprayed with cooking spray and 2 sprays of butter spray. Place ramekins in a 13 x 9-inch baking pan; add hot water to pan to a depth of 1 inch. Bake at 325 for 50-60 minutes or until a knife inserted in center comes out clean. Remove ramekins from pan. Cool

Just before serving: Preheat broiler. Sprinkle 1 teaspoon sugar on top of each custard. Place dishes on small baking sheet. Broil until sugar starts to caramelize; rotating sheet for even browning--about 2 minutes watching carefully. Chill several minutes before serving. Garnish with fresh raspberries and mint leaves.
