Introduction

Ingredients

*Gluten Free Honey Cornflakes (30g), 2.5 serving approx. 1 cup ground
.25 Cornmeal (Polenta)
*arrowhead brown rice flour, 0.25 cup
*Bob's Red Mill Organic White Rice Flour, .75 cup
Cinnamon, ground, .75 tsp
*Cumin seed, .25 tsp
Baking Powder, 1.5 tsp
Baking Soda, 1 tsp
Wet Ingredients
Hot Water, tap, 1 cup plus more as needed.
*Apple Cider Vinegar, 1 tbsp
Motts unsweetened Applesauce, 7 oz
**Flax Seed Meal (ground flax), 1 tbsp
Water 2 tbsp
Tips
Add chilli powder instead of cinnamon or cumin
add chiles or other fruits or vegetables for different tastes or textures.
Directions
Preheat the oven to 350
Mix the flax seed with two tablespoons of water and set aside (this is your egg).
Grind the Cornflakes into flour. Mix remaining dry ingredients.
Mix dry ingedients to the wet - batter should resemble cake or muffin batter. Add to a lightly greased skillet that can go into the oven. Bake in skillet in the over for 30 minutes or until desired doneness.
Serving Size: Makes approximately 12 2 inch pieces
