Ingredients

    3 cups cooked sweet potatoes
    1/2 tsp. salt
    2 eggs
    1/3 stick margarine
    1/2 c. milk
    1 tsp. vanilla
    1/2 tsp. cinnamon
    1/2 tsp. nutmeg
    Topping:
    1.25 c. chopped pecans
    1/4 c. flour
    1/3 stick margarine
    1/2 cup light brown sugar, packed

Tips

Can add raisins and omit sugar if desired.


Directions

Place cooked potatoes in mixing bowl and whisk until "mashed". Add margarine, sugar, salt, eggs, milk, vanilla, cinnamon, and nutmeg. Mix well. Mixture will look thin. Pour into greased casserole dish. Mix topping ingredients together. Drop topping on mixture. Bake at 350 degrees for 30-45 minutes.

Serving Size: makes one 3 quart casserole
