    12 oz can chicken, drained, rinsed & shredded
    1/4 c Frank's Red Hot sauce
    1/4 c Hellman's fat free mayo
    1 c Mexican shredded cheese
    1 c Shredded cheddar cheese
    1 tsp lemon juice
    2 tsp Tabassco sauce
    roasted red peppers to taste
    8 oz cream cheese, softened


Easily doubles: cook for 5-10 min longer.
Spreads easily on pizza dough or in quesadilla for added twist.
Serving size based on dipping with tortillas as entree.


Rinse & drain chicken while cream cheese softens. Mix cream cheese with mayo, red hot/tabassco sauces, lemon juice and roasted red peppers. Stir in chicken and cheese (reserving 1/2 c). Spread mixture into 8"x8" casserole dish & sprinkle with reserved cheese.
Bake for 20-25 min on 350. Serve with choice of tortilla, bread or vegetables.
