Ingredients

    1 small onion, chopped
    8 roma tomatoes, chopped
    2 tsp garlic, minced
    1/3 cup balsamic vinegar
    1 can chicken broth
    3 tbsp chopped fresh basil
    2 tbsp olive oil

Directions

1) Saute onion and garlic in olive oil until tender.
2)Add tomatoes, broth and vinegar. Cook until reduced, about 10 minutes.
3)Add basil. Cook another 3-5 min.

    Incredible!
    Incredible! Even my meat-loving husband said this was a keeper. Will cook again. Next time, I might let it simmer a little bit longer--but this was fantastic! - 9/30/11
