Ingredients

    1 cup brown rice
    1 can chickpeas
    1 large can chopped tomatoes
    1 can black beans
    1 cup kale pulp
    .25 cup hot peppers chopped
    2 cups of low-sodium vegetable broth

Tips

I add nonfat Greek yogurt after cooking for additional protein, calcium and creaminess.
Makes 9 1-cup servings


Directions

Combine ingredients and add one extra can of water (I fill up the tomato can). Bring to a boil and let simmer on the stove.
