Ingredients

    1 lb Baby Red Potatoes
    1 Tbsp Extra-Virgin Olive Oil
    1/2 Cup Grated Parmesan Cheese
    1/4 tsp of Sea Salt
    1 Dash of Black Pepper

Directions

Pre-heat oven to 400 degrees. Cut 1 lb of red potatoes into 1-inch pieces. Mix 1 Tbsp Extra-Virgin Olive Oil, 1/2 Cup shredded Parmesan cheese, 1/4 tsp of sea salt and 1 dash of pepper. Coat the potatoes with the mixture and arrange in a roasting pan. Bake for 45 minutes turning once.

    These were very easy and so yummy! The whole family loved them! I found that they were done at 35 minutes, though. Which was good because we were hungry! :) - 9/3/12
