Ingredients

2 12 oz bags of fresh cranberries
1 20 oz can of pineapple tidbits or crushed
2 boxes cherry sugar-free jello
or 1 box jello and 1 pkg. cherry Koolaid
2 cups boiling water
ice cubes
stevia to taste
Directions
Wash and pulse process cranberries just until they are coarsely chopped. Put into a sauce pan.
Bring 2 cups water to a boil. Sprinkle the jello in and stir until dissolved. (If using the koolaid option, stir it in at this time also. Pour mixture over the cranberries. Bring them to a boil and cook for about 3 minutes. Remove from heat and stir in pineapple (undrained). Add lots of ice cubes and stir to incorporate. Remove unmelted ice cubes, stir in the walnuts and pour into serving dish and chill until firm. If you use the 1 jello / koolaid option, it will not jell completely but be more of a thick sauce.
