Number of Servings: 2

Ingredients

    1 1/2 cup skim milk
    1 tsp vanilla
    dash of salt
3/4 cup old fashion rolled oats
    1 1/2 tsp brown sugar
1/2 tsp high quality maple syrup
    1/4 heaping tsp cinnamon
    dash of ginger
    half of 1/8 tsp nutmeg
    1/4 cup raisins unpacked
    1/8 cup pecans chopped

Tips

This thickens substantially after removed from the stove. Take it off when it looks just creamer than the thickness you desire.

Make sure to stir constantly to prevent burning the milk and vanilla.

Can substitute craisins, or different nuts, or add fruit to the top.

To reheat the next day, mix with a tablespoon or so of milk, microwave, remove to stir, and microwave again until hot.

Easily customizable for your taste.

Can use soy milk in place of regular milk, could use almonds, walnuts, or another nut of choice, could substitute craisins or dried prunes for the raisins. Possibilities are endless.

Directions

In a small sauce pan, bring milk, salt, and vanilla to a boil, stirring constantly. Add the rest of the ingredients, continue stirring, return to a boil, and reduce heat to medium. Stir until it thickens and becomes creamy, about 5 or 6 minutes.

Serve hot
